BBQ style pulled pork (slimming world friendly)

I LOVE traditional low and slow pulled pork smoked on a smoker but not everyone has a smoker!

This version of BBQ style pulled pork is so delicious and I found this recipe on a slimming world facebook page thanks to Miki Knight who posted the recipe.

The BBQ style sauce you make before you put the pork in the slow cooker would be amazing on anything like chicken or sausages or just as a BBQ sauce. I make it to use like ketchup to save some syns and the sauce will keep well for a up to a month in the fridge.

The pork comes out very tender and juicy and the whole meal was syn free. I served it with some of the coleslaw ( recipe on this blog) potato wedges, baked beans and a corn on the cob.

Pulled Pork

3lb-4lb pork shoulder (trimmed well of all fat)

5 tbsp worcestershire sauce
1 tsp mustard powder
500g passata
3 tbsp balsamic vinegar
2 cloves garlic (crushed)
3 tbsp sweener like splenda
1/2 tsp each of salt and pepper

Place all the sauce ingredients in a small saucepan and whisk together, bring to the boil then simmer while whisking for about 15 minutes until thicker, Taste for seasoning might need a little more salt or pepper.

Place pork into a slow cooker and pour over the sauce and cook on low for 6-8 hours. (depends if your slow cooker runs 'hot' mine does so I just do 6 hours) After this time remove the lid from the slow cooker and turn it up to high for an hour to help to reduce the sauce.

After this time use two forks to pull the meat apart into shreds and mix well into the sauce.
