I've been trying to find some nice healthy desserts for my son as he is now following the Slimming World plan. I know sugar free jelly is low in syns and quark is free so didn't see why I couldn't make a low syn cheesecake mousse.
1 Syn cheesecake mousse
1 packet strawberry or raspberry sugar free jelly
2 Alpen Light Summer Fruit bars
1 tub quark
cup of frozen berries (defrosted)
Make up the sachet of jelly with 1/4 pint of boiling water . Whisk until completely dissolved. Leave for five minutes then whisk in the tub of quark until smooth.
Line 2 cups with clingfilm ensuring there is enough overlapping outside the cup.
Crumble 1 Alpen Light bar in each cup and press down to make a base.
Pour over the jelly/quark mix between the two cups and then put in the fridge to set for an hour.
Lift up the clingfilm and transfer the cheesecake to a plate and scatter the defrosted berries on top.
Serves 2 individually on extra easy for 1 Healthy Extra and 1 syn each.
