Mediterreanean sausage stuffed peppers
1 pack Slimming World mediterreanean sausages (cooked and chopped into small pieces)
4 peppers (any colour)
1 tin or pack of chopped tomatoes
2 cloves garlic (crushed)
2 tsp dried oregano
1 red onion (chopped)
low cal spray oil
1/2 tsp salt
1/2 tsp pepper
Cut off the tops of the peppers and remove the seeds then cut in half. Place in a large pan of boiling salted water for about five minutes then remove and set aside.
Spray a large frying pan with spray oil and over a medium heat fry the red onion until soft but not coloured then add the garlic and oregano and fry for a few more minutes. Add the tomatoes and simmer over a low heat for about ten minutes until started to thicken.
Add the chopped sausages and cook for another couple of minutes then add salt and pepper. Place the cooked sausage mixture into the pepper halves in the baking dish and place in a hot oven gas 6 /200/400 for about 20-30 minutes until the top is browned.
